This easy 30-minute lasagna soup packs all the flavor of classic lasagna into a cozy, one-pot meal. With savory meat, rich tomato broth, tender pasta, and a melty ricotta topping β itβs comfort food made fast.
1 tbsp olive oil
1 lb ground beef or sausage
1 small onion, diced
3 garlic cloves, minced
1 (28 oz) can crushed tomatoes
1 tbsp tomato paste (optional)
4 cups chicken or beef broth
8 lasagna noodles, broken into pieces
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/2 tsp sugar (optional)
Salt & pepper to taste
Cheese topping:
1 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
Salt & pepper to taste
Heat oil in large pot. Brown meat.
Add onion and garlic, cook until fragrant.
Stir in tomatoes, paste, broth, and seasonings. Simmer.
Add pasta and cook 10β12 minutes until al dente.
Mix cheese topping ingredients in a bowl.
Serve soup hot with cheese mixture on top.
Add spinach, mushrooms, or cream for variations.
Store leftovers with pasta separated.
