1 1/2 pounds ground beef
1 tablespoon oil
1 small onion diced
2 carrots diced
2 celery stalks diced
3 cloves garlic minced
2 tablespoons tomato paste
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme leaves
1 cup frozen peas
Salt to taste
Black pepper to taste
2 pounds russet or Yukon Gold potatoes peeled and cubed
4 tablespoons butter
1/2 cup warm milk
1/2 cup shredded sharp cheddar optional
Boil potatoes in salted water for 15 to 20 minutes until tender. Drain.
Sauté onion, carrots, and celery in oil for 5 minutes. Add garlic and cook briefly.
Add ground beef and cook until browned. Drain excess fat.
Stir in tomato paste and cook 1 to 2 minutes.
Add broth, Worcestershire sauce, and thyme. Simmer 8 to 10 minutes until thickened.
