This cozy one-pot Ravioli Soup features tender pasta pillows simmered in a flavorful tomato broth with vegetables, herbs, and optional greens—perfect for quick dinners and comfort cravings.
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
2 tbsp tomato paste
1 (14.5 oz) can crushed or diced tomatoes
6 cups chicken or vegetable broth
1 tsp Italian seasoning
Salt and pepper, to taste
¼ tsp red pepper flakes (optional)
1 Parmesan rind (optional)
20 oz cheese or meat ravioli (fresh or frozen)
2–3 cups baby spinach or kale
Garnish:
Grated Parmesan
Fresh parsley or basil
Heat oil in a large pot. Sauté onion, garlic, carrots, and celery for 5–6 minutes.
Stir in tomato paste, tomatoes, broth, and seasonings. Simmer 10 minutes.
Add ravioli and cook until tender, 5–7 minutes.
Stir in spinach or kale during the last 2 minutes.
Serve hot with Parmesan and fresh herbs.
Cook ravioli separately for freezer storage.
