This cozy one-pot Ravioli Soup features tender pasta pillows simmered in a flavorful tomato broth with vegetables, herbs, and optional greens—perfect for quick dinners and comfort cravings.

Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 tbsp tomato paste

  • 1 (14.5 oz) can crushed or diced tomatoes

  • 6 cups chicken or vegetable broth

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • ¼ tsp red pepper flakes (optional)

  • 1 Parmesan rind (optional)

  • 20 oz cheese or meat ravioli (fresh or frozen)

  • 23 cups baby spinach or kale

Garnish:

  • Grated Parmesan

  • Fresh parsley or basil

Instructions

  • Heat oil in a large pot. Sauté onion, garlic, carrots, and celery for 5–6 minutes.

  • Stir in tomato paste, tomatoes, broth, and seasonings. Simmer 10 minutes.

  • Add ravioli and cook until tender, 5–7 minutes.

  • Stir in spinach or kale during the last 2 minutes.

  • Serve hot with Parmesan and fresh herbs.

Notes

  • Cook ravioli separately for freezer storage.

  • Add sausage or cream for variation.

  • Serve with crusty bread or salad
