1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup light corn syrup
1/4 cup brown sugar (for filling)
2 tablespoons unsalted butter (for filling)

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream 1 cup butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy.
  • Add eggs one at a time, then stir in 1 teaspoon vanilla extract.
  • Whisk together 2 1/2 cups flour, 1/2 teaspoon baking powder, and 1/2 teaspoon salt, then gradually combine with wet ingredients.
  • Fold in 1 cup chopped pecans.
  • For the filling, combine 1/2 cup corn syrup, 1/4 cup brown sugar, 2 tablespoons butter, and 1 teaspoon vanilla in a saucepan over medium heat; simmer 2–3 minutes.
  • Scoop tablespoon-sized dough portions onto baking sheets, make an indentation, and fill with 1 teaspoon filling.
  • Bake 12–15 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks.
