Cranberry Blueberry Salad with Blueberry Balsamic Dressing is a refreshing, colorful salad combining sweet and tart berries, crisp greens, nuts, and creamy cheese with a homemade blueberry balsamic dressing.
4 cups mixed salad greens or baby spinach
1/2 cup fresh blueberries
1/2 cup fresh or dried cranberries
1/4 cup candied or toasted pecans
1/4 cup crumbled goat cheese or feta
1/4 cup thinly sliced red onion (optional)
1/2 cup fresh blueberries (for dressing)
2 tablespoons balsamic vinegar
1 tablespoon honey or maple syrup
1/4 cup extra virgin olive oil
Salt and freshly cracked black pepper to taste
Prepare the dressing: cook blueberries, balsamic vinegar, and honey over medium heat for 5–7 minutes. Mash slightly, cool, then whisk in olive oil. Season with salt and pepper.
Wash and dry greens; place in a large bowl.
Add blueberries, cranberries, and nuts; optionally add red onion.
Crumble cheese over salad.
Drizzle dressing over salad and toss gently.
