Light, protein-rich mini bites made with cottage cheese, blueberries, and lemon zest. Perfect for snacking, breakfast, or a healthy treat.

Ingredients

  • 1 cup cottage cheese

  • 2 eggs

  • 2 tbsp honey or maple syrup (optional)

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • ¼ cup rolled oats or almond flour

  • ½ cup blueberries

Instructions

  • Blend cottage cheese, eggs, honey, vanilla, lemon zest, and flour until smooth.

  • Fold in blueberries gently.

  • Fill mini muffin tin ¾ full.

  • Bake at 350°F for 18–22 mins until golden and set.

  • Cool and store chilled.

Notes

  • Freeze up to 2 months.

  • Use almond flour for low-carb.

  • Serve cold or warm with honey drizzle.
