1 cup cottage cheese
2 eggs
2 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
Zest of 1 lemon
¼ cup rolled oats or almond flour
½ cup blueberries
Blend cottage cheese, eggs, honey, vanilla, lemon zest, and flour until smooth.
Fold in blueberries gently.
Fill mini muffin tin ¾ full.
Bake at 350°F for 18–22 mins until golden and set.
Cool and store chilled.
Freeze up to 2 months.
Use almond flour for low-carb.
Serve cold or warm with honey drizzle.
