Brownie Mix Cookies from Salt & Baker are chewy, fudgy, and chocolatey treats made from boxed brownie mix with added butter, eggs, and chocolate chips.

Ingredients

1 box brownie mix (1819 ounces)
1/2 cup unsalted butter, softened or melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips or chunks
Optional: 1/2 cup chopped nuts (walnuts or pecans)
Optional: Pinch of sea salt for topping

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Combine brownie mix, butter, eggs, and vanilla until smooth.

  • Fold in chocolate chips and optional nuts.

  • Scoop dough onto baking sheet, flatten slightly.

  • Bake 10–12 minutes until edges are set and centers remain soft.

  • Cool 5 minutes on baking sheet before transferring to wire rack.

  • Sprinkle with sea salt if desired.

Notes

Optional mix-ins include nuts, white chocolate, peanut butter, caramel, or espresso powder. Vegan and gluten-free adaptations possible.
