Soft, fudgy cookies made from boxed brownie mix. Easy to bake and perfect for chocolate lovers.
1 box brownie mix (approximately 18.3 ounces)
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips or chunks (optional)
1/4 teaspoon salt (optional)
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix brownie mix, melted butter, eggs, and vanilla until a thick dough forms.
Fold in chocolate chips or chunks if using.
Scoop dough into 1.5–2 inch balls on baking sheet. Chill for 15–20 minutes for thicker cookies if desired.
Bake 9–12 minutes until edges are set and centers are soft.
Cool 5 minutes on sheet, then transfer to wire rack.
Sprinkle sea salt for enhanced flavor or add nuts or caramel pieces for variation.
