Chewy chocolate cookies made from boxed brownie mix with optional chocolate chips or nuts.

Ingredients

1 box (18–19 oz) brownie mix
2 large eggs
1/3 cup vegetable oil or melted butter
1 teaspoon vanilla extract
1/2 cup chocolate chips or chunks (optional)
1/2 cup chopped nuts, like walnuts or pecans (optional)
1/4 teaspoon salt (if your mix is unsalted)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine brownie mix, eggs, oil, and vanilla extract. Stir until fully combined.
  • Fold in chocolate chips or nuts if desired.
  • Drop 1.5–2 tablespoon portions of dough onto the baking sheet, spacing 2 inches apart.
  • Bake 10–12 minutes until edges are set but centers are soft.
  • Cool 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.

Notes

Optional mix-ins include chocolate chips, nuts, or a swirl of peanut butter. For vegan cookies, use flax eggs and plant-based oil.
