1 lb boneless chicken thighs or breasts
2 tbsp Cajun seasoning
1 tbsp olive oil or butter
1 onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
4 cups chicken broth
½ cup heavy cream
2 oz cream cheese, softened (optional)
Salt and pepper, to taste
Optional: 1 cup cooked rice or pasta
Garnish: fresh parsley or green onions
Season chicken with Cajun spice. Sear in oil until golden. Remove and set aside.
Sauté onion, bell pepper, and celery until soft. Add garlic and cook 1 minute.
Add tomatoes and broth. Return chicken to pot. Simmer 20 minutes.
Remove chicken, shred, and return to soup.
Stir in cream and cream cheese. Simmer gently until melted and smooth.
Add cooked rice or pasta if using. Garnish and serve hot.
Adjust spice to taste. Freeze without cream. Add sausage or greens for variation.
