A bold and comforting soup made with tender chicken, smoky Cajun spices, and a creamy broth — perfect for cozy dinners with a kick.

Ingredients

  • 1 lb boneless chicken thighs or breasts

  • 2 tbsp Cajun seasoning

  • 1 tbsp olive oil or butter

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 2 stalks celery, chopped

  • 3 cloves garlic, minced

  • 1 can (14 oz) diced tomatoes

  • 4 cups chicken broth

  • ½ cup heavy cream

  • 2 oz cream cheese, softened (optional)

  • Salt and pepper, to taste

  • Optional: 1 cup cooked rice or pasta

  • Garnish: fresh parsley or green onions

Instructions

  • Season chicken with Cajun spice. Sear in oil until golden. Remove and set aside.

  • Sauté onion, bell pepper, and celery until soft. Add garlic and cook 1 minute.

  • Add tomatoes and broth. Return chicken to pot. Simmer 20 minutes.

  • Remove chicken, shred, and return to soup.

  • Stir in cream and cream cheese. Simmer gently until melted and smooth.

  • Add cooked rice or pasta if using. Garnish and serve hot.

Notes

Adjust spice to taste. Freeze without cream. Add sausage or greens for variation.
