Cajun Guacamole Shrimp Cups are bold, bite-sized appetizers featuring creamy guacamole and spicy shrimp served in crisp cups.
1/2 pound medium shrimp, peeled and deveined
1 teaspoon Cajun seasoning
2 teaspoons olive oil
2 ripe avocados
1 tablespoon fresh lime juice
2 tablespoons finely chopped red onion
1 clove garlic, minced
2 tablespoons chopped fresh cilantro
1 small tomato, diced
1/4 teaspoon salt
1/8 teaspoon black pepper
12 mini phyllo shells or tortilla scoops
Optional toppings: diced red bell pepper, chopped green onions, microgreens
Pat shrimp dry and toss in Cajun seasoning.
Cook shrimp in olive oil 2–3 minutes per side until pink and opaque. Remove and cool slightly.
Mash avocados in a bowl with lime juice.
Stir in red onion, garlic, cilantro, and diced tomato. Season with salt and pepper.
Spoon guacamole into shells or rounds.
Top each with a cooked shrimp and optional toppings.
Serve immediately.
Assemble cups just before serving to maintain crisp texture. Variations include tofu or roasted chickpeas for a vegan option.
