2 cups shredded carrots
2 apples (Granny Smith or Honeycrisp), cored and chopped or grated
1 tbsp lemon juice
½ cup plain Greek yogurt or mayonnaise
1–2 tsp honey or maple syrup
¼ cup raisins or dried cranberries (optional)
¼ cup chopped walnuts or pecans (optional)
Salt and black pepper, to taste
Shred carrots and chop apples into small matchsticks or cubes. Toss apples with lemon juice.
In a small bowl, mix yogurt or mayo with honey, lemon juice, salt, and pepper.
In a large bowl, combine carrots, apples, raisins, and nuts.
Pour dressing over and toss until well coated.
Chill for 20–30 minutes before serving.
