Honey Glazed Carrots & Green Beans are a sweet-savory side dish featuring tender carrots and crisp green beans tossed in a simple honey-garlic glaze. A beautiful and flavorful vegetable side for holidays or everyday meals.

Ingredients

  • 3 cups carrots, peeled and sliced into ¼-inch rounds

  • 3 cups fresh green beans, trimmed

  • 1½ tablespoons honey

  • 2 tablespoons butter or olive oil

  • 2 garlic cloves, minced

  • Salt and black pepper, to taste

  • Optional: lemon zest, red pepper flakes, fresh thyme, sesame seeds

Instructions

  • Blanch green beans in boiling water for 2–3 minutes. Transfer to ice water, then drain and pat dry.

  • In a large skillet, heat butter or oil over medium heat. Add carrots and sauté for 5–7 minutes.

  • Add garlic and blanched green beans. Sauté for 2–3 more minutes.

  • Drizzle in honey and toss to coat evenly. Cook for 2–3 minutes until glossy.

  • Season with salt and pepper. Add optional lemon zest or herbs. Serve warm.

Notes

  • Maple syrup can replace honey for a vegan version.

  • Prepare vegetables ahead for faster cooking.

  • Avoid overcooking to keep vegetables vibrant and tender.
