Honey Glazed Carrots & Green Beans are a sweet-savory side dish featuring tender carrots and crisp green beans tossed in a simple honey-garlic glaze. A beautiful and flavorful vegetable side for holidays or everyday meals.
3 cups carrots, peeled and sliced into ¼-inch rounds
3 cups fresh green beans, trimmed
1½ tablespoons honey
2 tablespoons butter or olive oil
2 garlic cloves, minced
Salt and black pepper, to taste
Optional: lemon zest, red pepper flakes, fresh thyme, sesame seeds
Blanch green beans in boiling water for 2–3 minutes. Transfer to ice water, then drain and pat dry.
In a large skillet, heat butter or oil over medium heat. Add carrots and sauté for 5–7 minutes.
Add garlic and blanched green beans. Sauté for 2–3 more minutes.
Drizzle in honey and toss to coat evenly. Cook for 2–3 minutes until glossy.
Season with salt and pepper. Add optional lemon zest or herbs. Serve warm.
Maple syrup can replace honey for a vegan version.
Prepare vegetables ahead for faster cooking.
