A sweet, savory, and sticky Chinese-inspired Char Siu Chicken made with a flavorful marinade of soy sauce, hoisin, honey, and spices, then roasted or grilled to caramelized perfection.

Ingredients

2 lbs boneless, skinless chicken thighs
2 tbsp light soy sauce
1 tbsp dark soy sauce
3 tbsp hoisin sauce
2 tbsp honey
1 tbsp Shaoxing wine or dry sherry
1 tbsp sesame oil
1 tbsp brown sugar (optional)
1 tsp Chinese five spice powder
3 garlic cloves, minced
1 tsp fresh ginger, grated
1 tsp rice vinegar or lime juice
Red food coloring (optional)

Instructions

  • In a large bowl, mix all marinade ingredients.

  • Add chicken, coat thoroughly, and marinate 8–24 hours in the fridge.

  • Preheat oven to 400°F (200°C) or heat grill to medium.

  • Place chicken on a wire rack over a foil-lined baking sheet or directly on grill.

  • Roast or grill for 25–30 minutes, turning halfway and basting with reserved marinade.

  • Broil or grill over direct heat for final 5–8 minutes to caramelize glaze.

  • Let rest for 5–10 minutes before slicing.

Notes

Use thighs for juicier results. Optional red food coloring gives traditional appearance but can be skipped. Marinate overnight for best flavor.
