A sweet, savory, and sticky Chinese-inspired Char Siu Chicken made with a flavorful marinade of soy sauce, hoisin, honey, and spices, then roasted or grilled to caramelized perfection.
2 lbs boneless, skinless chicken thighs
2 tbsp light soy sauce
1 tbsp dark soy sauce
3 tbsp hoisin sauce
2 tbsp honey
1 tbsp Shaoxing wine or dry sherry
1 tbsp sesame oil
1 tbsp brown sugar (optional)
1 tsp Chinese five spice powder
3 garlic cloves, minced
1 tsp fresh ginger, grated
1 tsp rice vinegar or lime juice
Red food coloring (optional)
In a large bowl, mix all marinade ingredients.
Add chicken, coat thoroughly, and marinate 8–24 hours in the fridge.
Preheat oven to 400°F (200°C) or heat grill to medium.
Place chicken on a wire rack over a foil-lined baking sheet or directly on grill.
Roast or grill for 25–30 minutes, turning halfway and basting with reserved marinade.
Broil or grill over direct heat for final 5–8 minutes to caramelize glaze.
Let rest for 5–10 minutes before slicing.
Use thighs for juicier results. Optional red food coloring gives traditional appearance but can be skipped. Marinate overnight for best flavor.
