A juicy, savory meatloaf bursting with garlic and parmesan flavor, brushed with a buttery glaze. Comfort food made modern — easy enough for weeknights, impressive enough for guests.
1 lb ground beef
1 lb ground pork
¾ cup grated parmesan
¾ cup breadcrumbs
2 eggs
6 cloves garlic (4 for meat, 2 for glaze), minced
2 tbsp parsley, chopped
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
Optional: red pepper flakes
Preheat oven to 375°F.
Sauté 4 cloves garlic in olive oil, let cool.
In bowl, mix meats, breadcrumbs, eggs, parmesan, garlic, herbs, and seasonings.
Shape into loaf on lined sheet pan.
Mix glaze ingredients; brush half on top.
Bake 45–55 minutes, or until 160°F inside. Brush with remaining glaze during final 10 minutes.
Broil 2–3 minutes for golden finish. Let rest before slicing.
Use almond flour for gluten-free version. Substitute turkey or chicken for leaner meatloaf. Keeps well for 3–4 days.
