1 cup long-grain white rice
2 medium zucchinis, diced
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 1/2 cups vegetable or chicken broth
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
Salt and freshly cracked black pepper to taste
Optional: cherry tomatoes, pine nuts, grated Parmesan or vegan cheese
Cook rice in broth according to package instructions; fluff and set aside.
Heat olive oil in a skillet, sauté onion until translucent.
Add garlic and cook 30 seconds until fragrant.
Sauté zucchini 5–7 minutes until tender; season with salt and pepper.
