Easy Grilled Cheese Burrito Copycat Recipe features seasoned beef, rice, creamy sauce, and a golden melted cheese crust wrapped in a warm tortilla.

1 pound lean ground beef
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper to taste
1 cup cooked white rice
2 tablespoons tomato sauce
½ teaspoon taco seasoning
½ cup sour cream
1 tablespoon mayonnaise
1½ cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 large flour tortillas
½ cup crunchy tortilla strips, optional

Instructions

  • Cook ground beef in a skillet until browned; drain excess grease.

  • Add spices and cook 2 minutes more.

  • Mix cooked rice with tomato sauce and taco seasoning.

  • Stir sour cream and mayonnaise to create creamy sauce.

  • Layer rice, beef, sauce, and cheese in center of tortilla.

  • Fold sides inward and roll tightly into burrito.

  • Sprinkle cheese into hot skillet and place burrito seam-side down.

  • Cook 2 to 3 minutes until cheese forms crust; flip and cook other side.

  • Rest briefly, slice, and serve warm.

Notes

Do not overfill to prevent tearing.
Wipe skillet between batches.
