1 pound ground beef, 1 can (15 oz) black beans (drained and rinsed), 1 can (15 oz) corn (drained), 1 can (14.5 oz) diced tomatoes, 1 packet taco seasoning (or 2 tablespoons homemade blend), 2 cups shredded cheddar cheese, 1 small onion (diced), 1 red bell pepper (diced), ½ teaspoon salt, ½ teaspoon black pepper, Optional toppings: sour cream, sliced avocado, fresh cilantro, jalapeños

Instructions

1. Brown ground beef with onion and bell pepper. 2. Drain excess fat, transfer to crockpot. 3. Add beans, corn, tomatoes, and taco seasoning. 4. Stir to combine. 5. Cook on low 4–5 hours or high 2–3 hours. 6. Sprinkle cheese 15–20 minutes before serving, cover until melted. 7. Garnish with optional toppings and serve.

Notes
