Soft & Easy Butter Pecan Cookies are tender, buttery cookies with a melt-in-your-mouth texture and crunchy toasted pecans.

Ingredients

1 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans, toasted

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  • Cream butter and sugars until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • Whisk flour, baking soda, and salt; gradually fold into wet mixture.
  • Fold in toasted pecans. Chill dough 15–20 minutes.
  • Scoop dough onto sheets, 2 inches apart; bake 10–12 minutes until edges are lightly golden. Cool 5 minutes before transferring to wire racks.

Notes

Toast pecans for flavor; chill dough to control spread; add chocolate chips or cinnamon if desired.
