Chickpea Feta Avocado Salad is a fresh and satisfying combination of chickpeas, creamy avocado, crisp vegetables, and tangy feta tossed in a light lemon dressing.

Ingredients

2 cans 15 ounces each chickpeas rinsed and drained
2 ripe avocados diced
1 cup cherry tomatoes halved
1 cup cucumber diced
1/4 cup red onion finely chopped
1/2 cup feta cheese crumbled
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper
1/2 teaspoon dried oregano optional

Instructions

  • Rinse and drain chickpeas thoroughly.

  • Dice tomatoes, cucumber, red onion, and avocado.

  • In a large bowl combine chickpeas, tomatoes, cucumber, and onion.

  • Add avocado and crumble feta over the top.

  • Whisk olive oil, lemon juice, salt, pepper, and oregano.

  • Pour dressing over salad and fold gently to combine.

  • Let sit 5 to 10 minutes before serving.

Notes

Add avocado just before serving if preparing ahead.
Adjust salt carefully due to feta.
Fresh parsley can be added for extra flavor.
