4 cups watermelon cubes or wedges
1 cup dark or semi-sweet chocolate chips
1 teaspoon coconut oil (optional)
2 tablespoons shredded coconut or crushed nuts (optional)
Cut watermelon into small wedges or cubes and remove the rind.
Pat the watermelon pieces dry with a paper towel.
Line a baking sheet with parchment paper.
Place chocolate chips in a microwave-safe bowl.
Heat the chocolate in 20-second intervals, stirring until melted.
Stir in coconut oil if needed for smoother texture.
Dip each watermelon piece halfway into the melted chocolate.
Place dipped watermelon onto the prepared baking sheet.
Sprinkle toppings over the chocolate if desired.
Refrigerate for 15–20 minutes until the chocolate sets.
Use chilled watermelon for faster chocolate setting.
