Soft, chewy, and rich with chocolate flavor, these brownie cookies combine the best of cookies and brownies.

Ingredients

1/2 cup unsalted butter, melted
4 ounces semisweet or bittersweet chocolate, chopped
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 cup chocolate chips or chunks (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Melt butter and chocolate together, stir, and let cool slightly.
  • Whisk sugars, egg, vanilla, and salt until smooth.
  • Fold in melted chocolate mixture gently.
  • Sift flour, cocoa, and baking powder; fold into wet ingredients.
  • Fold in chocolate chips, drop dough onto sheets.
  • Bake 10–12 minutes until edges are set and centers are soft. Cool on sheets 5 minutes.

Notes

Optional mix-ins include nuts, caramel, or peanut butter. Do not overbake for maximum fudginess.
