A hearty, creamy potato salad with tender potatoes, crisp vegetables, pickles, and a tangy dressing.

Ingredients

2 pounds Yukon Gold or red potatoes, peeled and diced
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 celery stalks, finely diced
1/2 red onion, finely diced
1/4 cup sweet pickle relish or chopped pickles
2 tablespoons fresh parsley or chives, chopped
Optional: 4 slices cooked bacon, crumbled
Optional: 1/2 teaspoon smoked paprika for garnish
