Everything you love about lasagna — meat, pasta, rich tomato sauce, and cheese — in a warm, hearty soup that’s perfect for family dinner nights.
1 tbsp olive oil
1 lb ground beef or sausage
1 onion, diced
4 garlic cloves, minced
2 tbsp tomato paste
1 (28 oz) can crushed tomatoes
1 (14 oz) can diced tomatoes
4–5 cups broth
2 tsp Italian seasoning
½ tsp red pepper flakes (optional)
8 lasagna noodles, broken
Salt & pepper to taste
Cheese Topping:
1 cup ricotta
1 cup shredded mozzarella
¼ cup grated Parmesan
1 tsp parsley (optional
Brown meat in olive oil. Add onion, then garlic.
Stir in tomato paste, tomatoes, broth, and seasoning. Simmer 20–25 min.
Cook pasta (in soup or separately).
Mix ricotta, mozzarella, Parmesan, and parsley.
Serve soup hot with a spoonful of cheese mixture on top.
Store pasta separately for best leftovers. Freeze soup without pasta.
