Everything you love about lasagna — meat, pasta, rich tomato sauce, and cheese — in a warm, hearty soup that’s perfect for family dinner nights.

Ingredients

  • 1 tbsp olive oil

  • 1 lb ground beef or sausage

  • 1 onion, diced

  • 4 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 (28 oz) can crushed tomatoes

  • 1 (14 oz) can diced tomatoes

  • 45 cups broth

  • 2 tsp Italian seasoning

  • ½ tsp red pepper flakes (optional)

  • 8 lasagna noodles, broken

  • Salt & pepper to taste

Cheese Topping:

  • 1 cup ricotta

  • 1 cup shredded mozzarella

  • ¼ cup grated Parmesan

  • 1 tsp parsley (optional

Instructions

  • Brown meat in olive oil. Add onion, then garlic.

  • Stir in tomato paste, tomatoes, broth, and seasoning. Simmer 20–25 min.

  • Cook pasta (in soup or separately).

  • Mix ricotta, mozzarella, Parmesan, and parsley.

  • Serve soup hot with a spoonful of cheese mixture on top.

Notes

Store pasta separately for best leftovers. Freeze soup without pasta.
