A warm, creamy crockpot meal with tender garlic parmesan chicken and fluffy baby potatoes. Simple, comforting, and packed with flavor.

Ingredients

2 lbs boneless, skinless chicken thighs or breasts
1.5 lbs baby potatoes, halved
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
1/2 cup heavy cream or 4 oz cream cheese (optional)
3 tbsp butter, melted
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, for garnish

Instructions

  • Wash and halve the baby potatoes.

  • Season chicken with salt, pepper, and Italian seasoning.

  • Layer potatoes in the bottom of crockpot.

  • Place chicken on top of potatoes.

  • Sprinkle garlic over chicken and potatoes.

  • Drizzle melted butter evenly over everything.

  • Add cream or cream cheese, if using.

  • Sprinkle parmesan across top.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Gently stir before serving and top with fresh parsley.

Notes

Use freshly grated parmesan for best flavor. For a richer finish, add a bit more cream at the end and stir gently.
