A warm, creamy crockpot meal with tender garlic parmesan chicken and fluffy baby potatoes. Simple, comforting, and packed with flavor.
2 lbs boneless, skinless chicken thighs or breasts
1.5 lbs baby potatoes, halved
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
1/2 cup heavy cream or 4 oz cream cheese (optional)
3 tbsp butter, melted
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, for garnish
Wash and halve the baby potatoes.
Season chicken with salt, pepper, and Italian seasoning.
Layer potatoes in the bottom of crockpot.
Place chicken on top of potatoes.
Sprinkle garlic over chicken and potatoes.
Drizzle melted butter evenly over everything.
Add cream or cream cheese, if using.
Sprinkle parmesan across top.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Gently stir before serving and top with fresh parsley.
Use freshly grated parmesan for best flavor. For a richer finish, add a bit more cream at the end and stir gently.
