Creamy Tomato Basil Chicken is a comforting slow cooker meal with tender chicken in a rich tomato and basil sauce, perfect for easy weeknight dinners.

½ pounds boneless, skinless chicken breasts or thighs, 1 can (14.5 oz) diced tomatoes, 1 cup heavy cream, ½ cup grated Parmesan cheese, 1 small onion (finely chopped), 3 cloves garlic (minced), ½ cup fresh basil leaves (chopped), 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon dried oregano (optional), ¼ teaspoon crushed red pepper flakes (optional), 1 tablespoon olive oil

Instructions

: 1. Pat chicken dry and season with salt, pepper, and oregano. 2. Optional: Sear chicken in olive oil 2–3 minutes per side. 3. Place onion and garlic in slow cooker, add chicken and diced tomatoes. 4. Stir in half of the basil. 5. Cook on low 4–6 hours or high 2–3 hours. 6. 30 minutes before serving, stir in cream and Parmesan cheese. 7. Adjust seasoning, garnish with remaining basil, and serve.

Notes

For a lighter option, use half-and-half or Greek yogurt. Add vegetables like bell peppers or mushrooms for extra flavor. Dairy-free options include coconut cream and plant-based cheese.
