2 English cucumbers, thinly sliced
2 medium carrots, shredded
1/4 red onion, thinly sliced (optional)
1/2 cup Greek yogurt or sour cream
2 tablespoons mayonnaise
1 tablespoon white vinegar or lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 teaspoon garlic powder or dried dill
Fresh parsley or dill, for garnish
Slice cucumbers and shred carrots. Soak onion if using.
Whisk yogurt, mayo, vinegar, salt, pepper, and optional seasonings in a bowl.
