1 cup plain Greek yogurt
1 ripe avocado
1 cup fresh parsley chopped
1/2 cup fresh basil chopped
2 tablespoons fresh chives chopped
1 small garlic clove minced
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Wash and dry all herbs thoroughly.
Roughly chop parsley and basil and finely chop chives.
Scoop avocado into a food processor.
Add Greek yogurt, herbs, garlic, lemon juice, and olive oil.
Blend until smooth and creamy, scraping down sides as needed.
Season with salt and black pepper and blend briefly to combine.
Transfer to a bowl and refrigerate for at least 30 minutes before serving.
