A rich and creamy Italian-style soup made with tender gnocchi, savory sausage, and fresh spinach. One-pot comfort food ready in under 40 minutes.

Ingredients

  • 1 tbsp olive oil

  • 1 lb Italian sausage

  • 1 small yellow onion, diced

  • 3 garlic cloves, minced

  • 1 tsp Italian seasoning

  • 1/4 tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • 4 cups chicken broth

  • 1 (16 oz) package potato gnocchi

  • 1 cup heavy cream or half-and-half

  • 2 cups baby spinach

  • 1/2 cup grated parmesan

  • Fresh parsley or basil for garnish

Instructions

  • Heat olive oil in a soup pot. Brown sausage and break into crumbles.

  • Add onion and garlic. Sauté 2–3 minutes. Stir in seasoning and pepper flakes.

  • Pour in broth and bring to a boil. Add gnocchi and simmer 4–5 minutes.

  • Reduce heat and stir in cream, spinach, and parmesan. Simmer gently.

  • Taste and season. Serve hot with toppings of choice.

Notes

Refrigerate leftovers up to 4 days. Add broth when reheating. For freezing, leave out cream and spinach.
