A rich and creamy Italian-style soup made with tender gnocchi, savory sausage, and fresh spinach. One-pot comfort food ready in under 40 minutes.
1 tbsp olive oil
1 lb Italian sausage
1 small yellow onion, diced
3 garlic cloves, minced
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
4 cups chicken broth
1 (16 oz) package potato gnocchi
1 cup heavy cream or half-and-half
2 cups baby spinach
1/2 cup grated parmesan
Fresh parsley or basil for garnish
Heat olive oil in a soup pot. Brown sausage and break into crumbles.
Add onion and garlic. Sauté 2–3 minutes. Stir in seasoning and pepper flakes.
Pour in broth and bring to a boil. Add gnocchi and simmer 4–5 minutes.
Reduce heat and stir in cream, spinach, and parmesan. Simmer gently.
Taste and season. Serve hot with toppings of choice.
Refrigerate leftovers up to 4 days. Add broth when reheating. For freezing, leave out cream and spinach.
