Crock Pot Marry Me Chicken is a creamy, slow-cooked dish with tender chicken in a sun-dried tomato and Parmesan sauce, perfect for romantic or special dinners.

1 ½ pounds boneless, skinless chicken breasts, ½ cup sun-dried tomatoes (chopped), 3 cloves garlic (minced), 1 cup heavy cream, ½ cup grated Parmesan cheese, ½ teaspoon salt, ¼ teaspoon black pepper, ½ teaspoon dried basil or Italian seasoning, ¼ teaspoon crushed red pepper flakes (optional), ½ cup chicken broth, 1 tablespoon olive oil

Instructions

1. Season chicken with salt, pepper, and herbs. 2. Optional: sear chicken in olive oil 2–3 minutes per side. 3. Place chicken in crockpot, top with sun-dried tomatoes and garlic. 4. Pour in chicken broth. 5. Cook on low 4–6 hours or high 2–3 hours. 6. Add cream and Parmesan 30 minutes before serving, cover until melted. 7. Garnish and serve.

Notes

Substitute half-and-half for cream for lighter version, or coconut cream for dairy-free. Add vegetables like spinach or mushrooms. Leftovers store 3 days in fridge.
