  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 garlic cloves, minced

  • 1 lb chicken breasts or thighs

  • 2 tbsp flour

  • 6 cups chicken broth

  • ½ cup sun-dried tomatoes, chopped

  • 1 tsp Italian seasoning

  • ½ tsp red pepper flakes

  • 1 cup heavy cream

  • ¾ cup grated Parmesan cheese

  • 2 cups spinach

  • Fresh basil or parsley for garnish

  • Salt & pepper to taste

Instructions

  • Heat oil and butter; sauté onion, carrots, and celery until soft. Add garlic and stir.

  • Add chicken, seasoning, and red pepper flakes; cook 2–3 minutes.

  • Stir in flour, then pour in broth and add sun-dried tomatoes. Simmer 20 minutes.

  • Shred chicken and return to pot. Stir in cream and Parmesan; simmer gently 5 minutes.

  • Add spinach and cook until wilted. Adjust seasoning.

  • Serve with fresh herbs and crusty bread.
