2 tbsp olive oil or butter
1 onion, chopped
2 garlic cloves, minced
1 carrot, diced (optional)
4 cups roasted pumpkin flesh or 2 cups canned purée
4 cups vegetable or chicken broth
½ tsp salt
¼ tsp black pepper
¼ tsp nutmeg
¼ tsp cinnamon
½ cup heavy cream or coconut milk
Fresh herbs for garnish
Roast or prepare pumpkin as directed.
