A fresh, crisp salad with cucumber, pineapple, red onion, and herbs, dressed with lime, honey, and olive oil.

Ingredients

2 cups cucumber, thinly sliced
1 1/2 cups fresh pineapple, diced
1/4 cup red onion, thinly sliced
2 tablespoons fresh mint or cilantro, chopped
2 tablespoons fresh lime juice
1 tablespoon honey
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
Optional: 1/4 cup toasted cashews or almonds for crunch

Instructions

  • Slice cucumbers and dice pineapple.

  • Thinly slice red onion and chop herbs.

  • Whisk lime juice, honey, olive oil, salt, and pepper to make dressing.

  • Combine cucumbers, pineapple, and red onion in a bowl.

  • Pour dressing over salad and toss gently.

  • Add herbs and optional nuts, tossing lightly.

  • Chill 5–10 minutes before serving.

Notes

Prepare just before serving for maximum freshness. Drain canned pineapple if used.
