A fresh, crisp salad with cucumber, pineapple, red onion, and herbs, dressed with lime, honey, and olive oil.
2 cups cucumber, thinly sliced
1 1/2 cups fresh pineapple, diced
1/4 cup red onion, thinly sliced
2 tablespoons fresh mint or cilantro, chopped
2 tablespoons fresh lime juice
1 tablespoon honey
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
Optional: 1/4 cup toasted cashews or almonds for crunch
Slice cucumbers and dice pineapple.
Thinly slice red onion and chop herbs.
Whisk lime juice, honey, olive oil, salt, and pepper to make dressing.
Combine cucumbers, pineapple, and red onion in a bowl.
Pour dressing over salad and toss gently.
Add herbs and optional nuts, tossing lightly.
Chill 5–10 minutes before serving.
Prepare just before serving for maximum freshness. Drain canned pineapple if used.
