This Cauliflower Parmesan is a healthy, crispy, and satisfying dish made with breaded cauliflower florets baked to perfection, topped with tomato sauce and dairy-free mozzarella. It’s perfect for a light dinner, side dish, or healthy comfort food.
1 large cauliflower, cut into florets
1 cup breadcrumbs (gluten-free if desired)
1/2 cup dairy-free mozzarella cheese (or regular mozzarella)
1/2 cup tomato sauce
1/4 cup grated dairy-free parmesan (optional)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Olive oil (for drizzling)
Preheat oven to 400°F. Bread the cauliflower with breadcrumbs and seasoning.
Bake cauliflower for 20-25 minutes, flipping halfway.
Top with tomato sauce, mozzarella, and bake for an additional 5-7 minutes until the cheese melts.
Garnish with parmesan and fresh herbs, then serve.
Can be made ahead and stored in the fridge for 3 days or frozen for later.
