2½–3 lbs Russet or Yukon Gold potatoes, cubed
1 packet Lipton Onion Soup Mix
⅓ cup olive oil
(Optional) Fresh parsley or Parmesan for garnish
Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
Toss cubed potatoes in a bowl with soup mix and olive oil until well coated.
Spread on baking sheet in a single layer.
Roast for 25 minutes. Flip, then roast another 15–20 minutes until crispy and golden.
Garnish if desired. Serve hot.
Use sweet potatoes or other root veggies for variety. Add herbs or cheese for extra flavor. Reheat in oven or air fryer.
