1 ½ pounds boneless, skinless chicken breasts or thighs, 1 can (20 oz) pineapple chunks (drained, reserve juice), 1 cup barbecue sauce, 2 cloves garlic (minced), 1 small onion (finely chopped), ½ teaspoon salt, ¼ teaspoon black pepper, Optional: crushed red pepper flakes, green onions for garnish

Instructions

1. Season chicken with salt and pepper, place in crockpot. 2. Add pineapple, garlic, and onion. 3. Mix barbecue sauce with reserved pineapple juice, pour over chicken. 4. Cook on low 4–6 hours or high 2–3 hours. 5. Stir gently 20 minutes before serving. 6. Garnish and serve over rice or vegetables.

Notes

Use chicken thighs for juicier meat. Add vegetables like bell peppers or carrots for nutrition. Freeze leftovers up to 3 months.
