1 cup sour cream
1–2 cups shredded cheese (cheddar, mozzarella, or pepper jack)
12 cups cooked shredded chicken
1 pound cocktail meatballs
1 (14-ounce) can black beans, drained and rinsed
1 cup corn kernels, fresh or frozen
1 (14-ounce) can artichoke hearts, chopped
1 small onion, finely chopped
2 cloves garlic, minced
12 jalapeños, minced (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon chili powder or paprika
1/2 cup salsa or diced tomatoes
1/2 cup barbecue sauce
1 teaspoon dried oregano or thyme
1 tablespoon fresh parsley or cilantro, chopped (optional)
Crushed crackers, breadcrumbs, or tortilla chips for topping

Instructions

  • Prepare all ingredients and shred or chop as needed.
  • Combine cream cheese, sour cream, cheese, and seasonings for dips.
  • Add vegetables or meats, stir evenly.
  • Transfer mixture to crockpot and spread evenly.
  • Add topping if desired.
  • Cook on low 2–3 hours or high 1–2 hours, stirring halfway through.
  • Serve hot with dippers or toothpicks.
