Ingredients

2 large English cucumbers
1 1/2 cups hummus
1 tablespoon olive oil
1/4 teaspoon paprika
2 tablespoons fresh parsley chopped
Salt to taste

Instructions

  • Wash and dry the cucumbers thoroughly.

  • Slice cucumbers into 1/2 inch thick rounds.

  • Arrange slices on a serving platter in a single layer.

  • Spoon or pipe about 1 tablespoon of hummus onto each slice.

  • Drizzle lightly with olive oil.

  • Sprinkle with paprika and salt if needed.

  • Garnish with chopped parsley and serve immediately.

Notes
