2 large English cucumbers
1 1/2 cups hummus
1 tablespoon olive oil
1/4 teaspoon paprika
2 tablespoons fresh parsley chopped
Salt to taste
Wash and dry the cucumbers thoroughly.
Slice cucumbers into 1/2 inch thick rounds.
Arrange slices on a serving platter in a single layer.
Spoon or pipe about 1 tablespoon of hummus onto each slice.
Drizzle lightly with olive oil.
Sprinkle with paprika and salt if needed.
Garnish with chopped parsley and serve immediately.
