1 English cucumber, sliced
1 cup cherry tomatoes, halved
1 cup mozzarella balls (Ciliegine or Bocconcini), halved
1/4 cup fresh basil leaves, torn
2 tbsp olive oil
1 tbsp balsamic vinegar or reduction
Salt and pepper, to taste
Slice cucumber and halve tomatoes and mozzarella.
In a bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Toss cucumber, tomatoes, and mozzarella in the dressing.
