A refreshing twist on the classic Caprese salad, with crisp cucumber, juicy tomatoes, creamy mozzarella, and fragrant basil tossed in a simple balsamic vinaigrette.

Ingredients

  • 1 English cucumber, sliced

  • 1 cup cherry tomatoes, halved

  • 1 cup mozzarella balls (Ciliegine or Bocconcini), halved

  • 1/4 cup fresh basil leaves, torn

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar or reduction

  • Salt and pepper, to taste

Instructions

  • Slice cucumber and halve tomatoes and mozzarella.

  • In a bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

  • Toss cucumber, tomatoes, and mozzarella in the dressing.

  • Add fresh basil and gently toss again.

  • Serve immediately with optional balsamic drizzle.

Notes

  • Use a mix of colored tomatoes for a beautiful presentation.

  • Store leftovers for up to 2 days; add fresh basil just before eating.

  • Add pasta, avocado, or chickpeas to turn it into a full meal.
