Easy Cucumber Caprese Salad is a crisp and refreshing combination of cucumbers, cherry tomatoes, fresh mozzarella, and basil tossed with olive oil and a touch of balsamic.

Ingredients

2 large English cucumbers sliced into 1/4 inch rounds
1 1/2 cups cherry tomatoes halved
8 ounces fresh mozzarella pearls or cubed fresh mozzarella
1/4 cup fresh basil leaves torn
3 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze or balsamic vinegar
1/2 teaspoon sea salt or to taste
1/4 teaspoon freshly ground black pepper

Instructions

  • Wash and dry the cucumbers and tomatoes thoroughly.

  • Slice cucumbers into 1/4 inch rounds and cut tomatoes in half.

  • Drain mozzarella and pat dry, then cube if using a large ball.

  • In a large bowl combine cucumbers, tomatoes, and mozzarella.

  • Add torn basil leaves.

  • Drizzle olive oil and balsamic over the salad.

  • Sprinkle with salt and black pepper.

  • Toss gently until evenly coated.

  • Taste and adjust seasoning if needed, then serve immediately.
