Easy Cucumber Caprese Salad is a crisp and refreshing combination of cucumbers, cherry tomatoes, fresh mozzarella, and basil tossed with olive oil and a touch of balsamic.
2 large English cucumbers sliced into 1/4 inch rounds
1 1/2 cups cherry tomatoes halved
8 ounces fresh mozzarella pearls or cubed fresh mozzarella
1/4 cup fresh basil leaves torn
3 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze or balsamic vinegar
1/2 teaspoon sea salt or to taste
1/4 teaspoon freshly ground black pepper
Wash and dry the cucumbers and tomatoes thoroughly.
Slice cucumbers into 1/4 inch rounds and cut tomatoes in half.
Drain mozzarella and pat dry, then cube if using a large ball.
In a large bowl combine cucumbers, tomatoes, and mozzarella.
Add torn basil leaves.
Drizzle olive oil and balsamic over the salad.
Sprinkle with salt and black pepper.
Toss gently until evenly coated.
Taste and adjust seasoning if needed, then serve immediately.
