2 medium cucumbers, thinly sliced
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella, sliced or torn
1/2 cup fresh basil leaves
3 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze or reduction
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
Optional: 1 teaspoon lemon juice
Wash and slice cucumbers thinly.
Halve cherry tomatoes.
Slice or tear mozzarella into pieces.
Arrange cucumbers, tomatoes, mozzarella, and basil on a serving plate.
Whisk together olive oil, balsamic glaze, salt, pepper, and optional lemon juice.
Drizzle dressing over salad.
Let sit 5–10 minutes, then serve.
