Hearty Dublin Coddle is a traditional Irish stew made with sausages, bacon, potatoes, and onions gently simmered in broth. This cozy dish is perfect for St. Patrick’s Day or any comforting family dinner.
6 Irish-style pork sausages
6 slices thick-cut bacon chopped
4 medium potatoes sliced thick
2 large onions sliced
2 cups chicken or light pork broth
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley optional
Preheat oven to 325°F.
Cook bacon in a Dutch oven until lightly browned. Remove and set aside.
Brown sausages lightly on both sides. Remove and set aside.
Sauté onions in drippings until softened.
Layer half the potatoes, bacon, and sausages in the pot. Repeat layers.
Pour broth to just below the top layer.
Cover and bake 1 1/2 to 2 hours until tender.
Rest 10 minutes before serving and sprinkle with parsley if desired.
Do not over-brown onions.
Keep broth level just below top layer.
Mash a few potatoes to thicken if desired.
