Dublin Coddle with Bacon, Sausage, and Onions

Hearty Dublin Coddle is a traditional Irish stew made with sausages, bacon, potatoes, and onions gently simmered in broth. This cozy dish is perfect for St. Patrick’s Day or any comforting family dinner.

Ingredients

6 Irish-style pork sausages
6 slices thick-cut bacon chopped
4 medium potatoes sliced thick
2 large onions sliced
2 cups chicken or light pork broth
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley optional

Instructions

  • Preheat oven to 325°F.

  • Cook bacon in a Dutch oven until lightly browned. Remove and set aside.

  • Brown sausages lightly on both sides. Remove and set aside.

  • Sauté onions in drippings until softened.

  • Layer half the potatoes, bacon, and sausages in the pot. Repeat layers.

  • Pour broth to just below the top layer.

  • Cover and bake 1 1/2 to 2 hours until tender.

  • Rest 10 minutes before serving and sprinkle with parsley if desired.

Notes

Do not over-brown onions.
Keep broth level just below top layer.
Mash a few potatoes to thicken if desired.
