Broccoli Cheese Bites are baked, golden snacks made with finely chopped broccoli, sharp cheddar, and Parmesan. Crisp outside and tender inside, they are perfect for appetizers or side dishes.
2 cups finely chopped broccoli, lightly steamed
1 cup shredded sharp cheddar
1/4 cup grated Parmesan
1/2 cup breadcrumbs
2 large eggs
1 small onion, finely minced or 1 clove garlic minced
Salt to taste
Black pepper to taste
Optional pinch paprika
Preheat oven to 375°F and grease a mini muffin tin.
Steam broccoli for 3 to 4 minutes and drain well.
Finely chop broccoli and remove excess moisture.
Combine broccoli, cheddar, Parmesan, breadcrumbs, onion or garlic, salt, and pepper.
Whisk eggs and mix into broccoli mixture.
Scoop mixture into muffin tin and press gently.
Bake 18 to 22 minutes until golden and firm.
Cool 5 minutes before removing from pan.
Drain broccoli thoroughly to prevent sogginess. Reheat in oven for best texture.
