Easy Caprese Pasta Salad combines tender pasta, sweet cherry tomatoes, fresh mozzarella, and basil tossed in a light olive oil dressing.
12 ounces rotini or bowtie pasta
2 cups cherry or grape tomatoes halved
8 ounces fresh mozzarella pearls or cubed mozzarella
1/3 cup fresh basil leaves torn
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar or balsamic glaze optional
1/4 teaspoon dried oregano optional
Salt and freshly ground black pepper to taste
Cook pasta in salted boiling water until al dente. Drain and cool.
Slice tomatoes and prepare mozzarella if needed.
In a large bowl combine cooled pasta, tomatoes, and mozzarella.
In a small bowl whisk olive oil, vinegar or glaze, oregano, salt, and pepper.
Pour dressing over pasta mixture and toss gently.
Add torn basil and stir lightly.
Chill for 20 to 30 minutes before serving. Adjust seasoning if needed
Add basil just before serving for brightest flavor.
Reserve a little olive oil to refresh if making ahead.
Use whole wheat or gluten-free pasta if desired.
