Easy Caprese Pasta Salad combines tender pasta, sweet cherry tomatoes, fresh mozzarella, and basil tossed in a light olive oil dressing.

Ingredients

12 ounces rotini or bowtie pasta
2 cups cherry or grape tomatoes halved
8 ounces fresh mozzarella pearls or cubed mozzarella
1/3 cup fresh basil leaves torn
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar or balsamic glaze optional
1/4 teaspoon dried oregano optional
Salt and freshly ground black pepper to taste

Instructions

  • Cook pasta in salted boiling water until al dente. Drain and cool.

  • Slice tomatoes and prepare mozzarella if needed.

  • In a large bowl combine cooled pasta, tomatoes, and mozzarella.

  • In a small bowl whisk olive oil, vinegar or glaze, oregano, salt, and pepper.

  • Pour dressing over pasta mixture and toss gently.

  • Add torn basil and stir lightly.

  • Chill for 20 to 30 minutes before serving. Adjust seasoning if needed

Notes

Add basil just before serving for brightest flavor.
Reserve a little olive oil to refresh if making ahead.
Use whole wheat or gluten-free pasta if desired.
