2 English cucumbers, thinly sliced
2 medium carrots, shredded
1/4 red onion, thinly sliced (optional)
1/2 tsp salt (for draining cucumbers)
1/2 cup plain Greek yogurt
1–2 tbsp mayonnaise (optional)
1 tbsp lemon juice or white vinegar
1/2 tsp garlic powder
Salt and black pepper, to taste
Fresh dill or parsley, for garnish (optional)
Salt sliced cucumbers and let sit 15 minutes. Pat dry.
In a bowl, whisk yogurt, mayo, lemon juice, garlic, salt, and pepper.
Add cucumbers, carrots, and onion. Toss to coat.
Chill 20 minutes before serving. Garnish with herbs.
