A cozy, one-dish chicken cobbler dinner made with creamy chicken filling and a cheesy biscuit topping using Red Lobster biscuit mix. Perfect for weeknights or comfort food cravings.
3 cups cooked, shredded chicken
2 cups frozen mixed vegetables
1 (10.5 oz) can cream of chicken soup
1 cup chicken broth
1 package Red Lobster Cheddar Bay Biscuit Mix (reserve seasoning packet)
1 cup milk
4 tbsp butter, melted
1/2 tsp garlic powder
Salt and pepper to taste
Preheat oven to 375°F and grease a 9×13″ baking dish.
Layer the chicken evenly on the bottom.
Scatter frozen vegetables over the chicken.
In a bowl, whisk soup and broth. Pour gently over vegetables.
In a separate bowl, mix biscuit mix (not seasoning packet), milk, and garlic powder. Pour over the soup layer without stirring.
Stir seasoning packet into melted butter. Drizzle over the top.
Bake uncovered for 40–45 minutes until golden brown and bubbling.
Let rest 5–10 minutes before serving.
Add cheddar to the biscuit batter for extra flavor. Use low-sodium broth for a lighter version. Great as leftovers or freezer-friendly.
