Ham & Cream Cheese Cucumber Rolls are refreshing bite-sized appetizers made with thin cucumber ribbons wrapped around creamy herb-seasoned cheese and savory ham.
2 large English cucumbers
8 ounces cream cheese softened
1 tablespoon fresh dill or chives finely chopped
1 teaspoon lemon juice optional
1/8 teaspoon black pepper
8 to 10 thin slices deli ham
Wash and dry cucumbers, then slice lengthwise into thin ribbons.
Pat slices dry with paper towels.
Mix cream cheese with herbs, lemon juice, and black pepper.
Spread a thin layer of cream cheese over each cucumber slice.
Place a slice of ham on top and trim if needed.
Roll tightly from one end and place seam side down.
Chill for 15 to 20 minutes before serving.
Dry cucumbers thoroughly to prevent excess moisture. Secure with toothpicks if transporting or serving at gatherings.
