Ingredients

3 large carrots, peeled and sliced
12 ounces fresh green beans, trimmed
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons honey
1 tablespoon fresh lemon juice
Salt to taste
Black pepper to taste
Pinch dried thyme optional

Instructions

  • Bring salted water to a boil and cook carrots 4 to 5 minutes.

  • Add green beans and cook 2 to 3 minutes more.

  • Drain and cool in cold water, then drain again.

  • Melt butter in a skillet and sauté garlic briefly.

  • Stir in honey and lemon juice and simmer 1 to 2 minutes.

  • Add vegetables and toss to coat.

  • Cook 3 to 5 minutes until tender and glossy.

  • Season and serve warm.

Notes

Roasting the vegetables instead of blanching adds deeper flavor. Adjust honey to control sweetness.
