3 large carrots, peeled and sliced
12 ounces fresh green beans, trimmed
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons honey
1 tablespoon fresh lemon juice
Salt to taste
Black pepper to taste
Pinch dried thyme optional
Bring salted water to a boil and cook carrots 4 to 5 minutes.
Add green beans and cook 2 to 3 minutes more.
Drain and cool in cold water, then drain again.
Melt butter in a skillet and sauté garlic briefly.
Stir in honey and lemon juice and simmer 1 to 2 minutes.
Add vegetables and toss to coat.
Cook 3 to 5 minutes until tender and glossy.
Season and serve warm.
Roasting the vegetables instead of blanching adds deeper flavor. Adjust honey to control sweetness.
