This easy low carb burrito bowl is packed with protein, healthy fats, and bold Tex-Mex flavor — all ready in under 25 minutes. A perfect breakfast for keto or clean eating lifestyles.
1/2 lb ground turkey or chicken
4 large eggs
1/2 cup shredded cheddar cheese
1/2 avocado, diced
1/2 onion, diced
1 bell pepper, diced
1 cup spinach or kale (optional)
1 tbsp olive oil
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp chili powder
Salt & pepper to taste
2 tbsp salsa or hot sauce
Fresh cilantro and lime (optional)
Sauté onion and bell pepper in olive oil until soft.
Add ground meat and seasonings. Cook until browned.
Remove and scramble eggs in the same pan.
Wilt greens if using.
Assemble bowls with eggs, meat, veggies, cheese, avocado, and salsa.
Garnish with cilantro and lime, if desired.
