Easy Asian Cucumber Salad is a crisp and refreshing side dish made with thinly sliced cucumbers tossed in a light rice vinegar and sesame dressing.

Ingredients

2 large English cucumbers thinly sliced
3 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon honey or sugar
1 clove garlic minced
1/4 teaspoon red pepper flakes optional
1 tablespoon toasted sesame seeds
2 green onions sliced

Instructions

  • Wash and thinly slice cucumbers.

  • Optional: Lightly salt cucumbers and let sit 10 minutes, then drain.

  • Whisk rice vinegar, soy sauce, sesame oil, honey, and garlic.

  • Toss cucumbers with dressing until evenly coated.

  • Add red pepper flakes if desired.

  • Sprinkle sesame seeds and green onions on top.

  • Let rest 5 to 10 minutes before serving.

Notes

Use low-sodium soy sauce if preferred.
Do not overdress to maintain crisp texture.
